Now on the street, the most popular snack in front of the school is this Taiwanese hand cake. Every time I pass by, I will see the stalls lined up. I bought it and studied it carefully. The imitation is very successful, at least I got my mother. For sure! "

Crispy Hand Cake

1. Add warm water to the flour, add 10g of oil to it and knead it into a dough

2. It won’t be smooth at first, but relax for 15 minutes after kneading.

3. Knead again, it will easily knead into a smooth dough

4. Divide the dough evenly into 3 equal parts, knead into small smooth circles, and relax again for 30 minutes!

5. Heat up some oil in the pot, add pepper and shallots and fry until fragrant

6. Pour out the scallion oil and let cool for a while (don’t need onion and pepper)

7. After the dough is relaxed, apply a layer of oil on the chopping board, take a small portion and roll it into a large rectangular thin crust, the thin chopping board can be seen

8. Brush with scallion oil

9. Sprinkle with salt and five-spice powder (you can omit the five-spice powder if you don't like it)

10. Then fold it up like a fan, the dough is very thin, so be careful when you fold it

11. Then turn it up from left to right

12. After finishing everything, last 20 minutes

13. After the 饧 is done, squeeze it and roll it into a pie with a rolling pin

14. Put the right amount of oil in the pan, put the pancakes in and fry

15. Then turn it over and continue frying

16. At this time, turn down the heat, beat an egg on top of the pancake, break it with a spatula, then turn it over, let the egg face down and fry it again.

17. Serving the pancakes

18. Spread lettuce leaves and fried ham sausage, add noodle sauce and tomato sauce, and you can eat it!

Tips:

The looseness of the dough is very important, the more oily it will be, the more oily it will be, and the dough will be easier to roll out!

The sauce in the middle can be added according to your own taste!

The ham sausage will taste better if it is fried in the pan in advance!

Before rolling the dough into a thin crust, remember to grease the chopping board, otherwise it will stick!
