Croquettes
1.
Dilute the starch with cold water in advance, fold it into another basin with a scoop to clarify, and soak overnight. It will not splash when it is soaked and fried.
2.
Mince scallion and ginger.
3.
Cut carrots into shreds, wash and chop enoki mushrooms.
4.
Add salt, light soy sauce, minced ginger, thirteen spices, 2 eggs to the fat and lean pork filling. Stir in one direction.
5.
Add sesame oil, chopped green onion and continue to mix well.
6.
Add carrots, celery, and diced shiitake mushrooms and stir well.
7.
Pour out the water after the starch settles, leaving the foundation powder.
8.
Deduct the foundation powder and put it in the stirred meat filling.
9.
Pour wide oil in the pot, add a few peppers, and when the pepper rises to warm up, you can start squeezing the balls.
10.
Grab a handful of minced meat in the left hand as shown in the picture, squeeze out the meatballs the size of Chinese medicine pills from the tiger's mouth and put them into the pot.
11.
The speed of squeezing the balls should be fast, one by one, do not stir, wait for a while after the balls are shaped, scoop up with a fence, the balls float up, and continuously roll out the air on the surface of the balls.
12.
The brown oil is removed and drained. The delicious and nutritious meatballs are ready. The colors look great even if you break it apart!
Tips:
The starch must be soaked in advance, otherwise it will easily collapse and hurt people during frying.
