Crucian Tofu Soup

Wash a piece of crucian carp, wipe it with a little salt, add a little cooking wine, cut the tender tofu, wash the shallots, and slice the ginger.

Boil the tofu in the pot and remove it for later use.

Put a few slices of ginger into the belly of the fish.

Put an appropriate amount of oil in the pot, add the fish, and fry on both sides.

Pour proper amount of boiling water into the pot, add shallots, ginger slices, a little cooking wine, and boil on high heat.

Tips:
1. The fish should be fried on both sides, the soup will be more milky white.
2. Add water to cook the fish, add enough water at one time, don't add cold water in the middle.
3. Add appropriate amount of salt to season the fish soup before it comes out of the pot.
4. Crucian carp has many spines. When drinking soup, be careful of small spines.
