Cured Potato Chips

Peel the potatoes and dig out the useless parts, wash the slices and soak them in clean water, drain them before putting them in the pot and set aside.

Fatty bacon slices.

Stir-fry the bacon in a dry pan to get the oil out.

Add potato slices and stir fry for 3 minutes. Add salt, vinegar, pepper and chili shells and stir-fry. Add a small bowl of water, cover and simmer for 5 minutes. Stir fry 2 to 3 times.

Uncover the lid and continue to stir-fry until the water is dry, the potatoes are cooked through, add light soy sauce and stir-fry until they are out of the pot.
