The ingredients for this dish are dried mushrooms and red curry paste is used for curry. The frying method is quite simple, as long as the ingredients are pre-processed in advance. Of course, fresh mushrooms, shiitake mushrooms, pleurotus eryngii and other ingredients can also be used instead.

Curry Pork with Fried Mushrooms

1. Slice the tenderloin

2. Soak the mushrooms until soft, pick and wash them

3. Then steam for 20 minutes, dry the water and set aside

4. Marinate the tenderloin with salt and cooking wine for 2 minutes, add water, starch, and sizing, add a little oil and mix well

5. Put the sizing meat slices into boiling water, blanch them and turn them white, remove the water and set aside.

6. Heat oil, fry scallions and ginger, add red curry paste and stir fry evenly

7. Add the mushrooms and stir-fry evenly

8. Add meat slices and add a little soy sauce to enhance the flavor

9. Add a little boiled water, stir well, add a little salt and sugar to taste

10. Stir-fry evenly, then turn off the heat

11. Put it out of the pot and serve on the plate, ready to taste
