Originally, this was a famous northeastern dish. Because my daughter liked carrots, I had to add more carrots to make it into Sixian.

Di San Xian with More Carrots

1. Salt the eggplant and steam it for 5 minutes

2. Cut into pieces and fry

3. Fry golden brown on both sides and serve

4. Add potatoes, green peppers, carrots and stir fry

5. Add eggplant

6. Add in water and simmer until the water is dry

7. Add salt, soy sauce and oyster sauce and stir fry evenly

8. The potatoes are ready to be cooked
