Double Pepper Lean Pork Mustard

Prepare the ingredients

Put the lean meat in a bowl, add salt and chicken essence

Then add 2 drops of very fresh

Add 1 teaspoon cornstarch

Add 1 egg and marinate evenly for ten minutes

Wash the mustard tuber in Wujiang with water once for later use (because the mustard tuber is a bit salty, it is overwatered)

Put oil in the pan and boil it red, pour in the lean meat, stir fry until cooked

Pick up the pan and put it on another plate for later use

Bring the remaining oil of the fried meat to red, then pour in the chili and stir fry

Then pour in Wujiang mustard and fry together for 10 seconds

Add lean meat and 2 drops of soy sauce after sautéing

Stir-fry together for 1 minute to start the pot
Tips:
1. Excess mustard tuber with water can make the vegetables less salty. According to personal preference, it can be too watery;
2. Adding eggs and cornstarch to lean meat can make the meat more smooth and tender;
3. You don't need to add salt when adding peppers. There is salt in the mustard, and the meat has been salted before marinating;
4. I added a few drops of soy sauce for coloring, so I don't need to add it.
