Dragon Boat Festival Dumplings with Fragrant Fragrant ---- Five Spiced Bacon Dumplings
1.
Put the zong leaves and water plants in the pot, pour in water (without the zong leaves), turn to low heat and cook for 5 minutes after the water is boiled. Then put it in cold water and wash it piece by piece, and soak it in cold water (to prevent dryness).
2.
Wash the eyebrow beans and soak them in clean water overnight, then drain the water for later use.
3.
The glutinous rice is also washed and soaked in clean water overnight, and then drained for later use. (I chose Thai glutinous rice)
4.
Wash the fresh meat and cut into pieces (size according to your preference), marinate with five-spice powder, light soy sauce, and sugar for one night. (It’s hot, remember to put it in the refrigerator~)
5.
Dried shiitake mushrooms are soaked until soft, chopped and set aside.
6.
Pour the glutinous rice, eyebrow peas, shiitake mushrooms, salt, light soy sauce, five-spice powder and cooking oil into the pot and stir evenly, then turn on high heat and stir fry until it is a bit sticky and serve. (This is to prevent the material from loosening when wrapping the dumplings, so it is more convenient to wrap)
7.
Take two zong leaves, stack them on the smooth side up, and fold them into a funnel shape from the 1/3 position of the tip of the leaf.
8.
Scoop in a spoonful of rice material, put a piece of fresh meat, and then scoop a spoonful of rice material and press it tightly with a spoon. (Be careful not to overfill, leave some distance between the edge of the rice and the edge of the rice dumplings)
9.
Fold the zong leaves on both sides with your index finger and thumb, and then fold down the remaining leaves, and fold the growing part to the side. Remember to put your hands a little bit harder, and finally tie them firmly with the water weeds.
10.
Finally, put it into the pot, pour in water, the water must cover all the rice dumplings, and then turn to medium heat to boil for two hours. During this period, add water once or twice to ensure that the rice dumplings are completely submerged.
Tips:
Because my dad has high blood pressure, I have to choose lean meat in terms of meat selection. If I change to pork belly, the zongzi will be more fragrant and delicious~
Since the water will evaporate when the zongzi is cooked, remember to add water during the process! It's best to change the position of the zongzi, so that it will be more evenly cooked!
You can choose the ingredients for the zongzi according to your favorites. For example, red peas can be replaced with red beans, peanuts and other ingredients. Friends who like seafood can also add dried shrimps or scallops!
