Dry Fried Sea Fish (crucian Carp)

The fish is cleaned, drained, and salted for about 10 minutes.

Heat the oil pan to 80%. Put the marinated fish down on medium heat and start frying. Adjust the heat slowly in the middle. Don't stir the fish. When it is almost cooked, turn the heat to high and turn off the heat immediately. Fry in place until golden brown and turn off the heat, let it cool for a while before turning on the other side.

When frying the other side, be sure to fry slowly and patiently. Do not scoop up immediately after frying. Cool a little to keep the fish skin intact.

After frying, pour a little soy sauce while it's hot.
Tips:
How much moisture will drain the marinated fish before frying. The soy sauce is mainly for freshness. Don’t put too much, just use a spoon to slowly tap it.
