Tofu Fish Soup

Cut sea fish into pieces. Wash it up.

Prepare shredded ginger, appropriate amount of cooking wine, coriander and chopped green onions.

Add shredded ginger and cooking wine to the fish cubes.

Add half of the chopped shallots and mix well. Marinate for 15 to 20 minutes.

A box of old tofu.

Cut tofu into thick slices and set aside.

Put the lard in the pan.

The marinated fish pieces can be fried in a pan until the surface changes color.

All the fish pieces are fried and put in the soup pot.

Add appropriate amount of water, as the water temperature rises, there will be floating dust, scoop it out with a spoon. Cover the pot and simmer for 40 minutes.

Stew until the soup is white.

Add tofu, and offal, you can add salt to taste at this time. Simmer for another 10 minutes.

Sprinkle with cilantro and the remaining shallots, and it's ready to be served.
Tips:
The fish is marinated for 20 minutes in advance to get rid of fishy.
Fried with pig will make it more fragrant.
The purpose of frying the fish pieces is to make the fish pieces not easy to fall apart when the soup is cooked.
