Eggplant & Sausage Braised Rice
1.
One homemade sausage, one eggplant, and a few broad beans.
2.
Boil the sausage in boiling water for a while, remove it and slice it; cut the eggplant into strips and marinate in salt for about 10 minutes; peel off the outer skin of the broad beans after a while in boiling water.
3.
Turn on a small fire, fry the sausages in oil and brown them on both sides (so that it won’t be too bad when simmered in rice, and it’s chewy), and then add a little umami soy sauce.
4.
Then add the broad beans and the eggplant slightly squeezed out and stir fry.
5.
Then add half a bowl of water to the pot and simmer until the water boils (you don't need to add salt, because the eggplant has already been salted when pickling it).
6.
Finally, put the washed rice into an electric pressure cooker, and then put the cooked vegetables and water into the rice and simmer (the water in the pressure cooker should probably cover the vegetables slightly).
7.
This is the finished product after simmering, is it very simple?
Tips:
1. The ingredients for the braised rice can be freely matched. For meat ingredients, you can choose ribs, mutton, chicken, beef, etc., and the ingredients can choose potatoes, radishes, Shanghai greens, and so on.
2. The addition of broad beans to this dish is just a temporary motive, just because there is surplus in the refrigerator, so those who don't like it can not add it.
3. It is best not to cut the ingredients too small for the stewed rice, it is easy to cook until the end you don't know what it is.
