Eggplant Braised Cake

Eggplant shreds

Shred the meat, add soy sauce, a few drops of vinegar, and marinate for ten minutes. Shred green onion, diced garlic, set aside

Pour slightly more oil than the cooking in the pot, add the marinated pork and stir fry. When the flesh turns white, add the green onion and stir fry, then add the eggplant and stir fry, then add soy sauce and salt to taste, and continue to stir moment.

After adding water to the pot, spread the cake strips on top of the dish, without turning it, cover the pot and simmer on medium heat for 35 minutes. Then turn off the heat, add a few drops of sesame oil, pour the garlic granules and stir and mix thoroughly.

Tips:
I added a spoonful of bean paste when I fry the eggplant, which is not bad.
