Eggplant can be served cold, fried, dried, and soaked in sauce. I remember that I used to grow eggplants at home. Mom always picked the tenderest eggplants, then shredded them and marinated them in salt for a while, added a little soy and sesame oil for a cold dressing, and the eggplants were like pickles. They were delicious. This dish of minced meat and eggplant in a pot is aromatic and appetizing, fresh and delicious.

Eggplant Claypot with Minced Meat

1. Prepare minced pork

2. After the eggplant is washed, cut into sections, don't cut the knife in the middle

3. Prepare the seasoning

4. Wash and cut green and red peppers

5. Heat the oil for 5 minutes, pour in the minced pork and stir-fry until all the color changes, then serve and set aside

6. Add seasoning and sauté

7. Add the bean paste and stir fry for a fragrant flavor

8. Add the eggplant and stir constantly to make the eggplant soft

9. Join soy sauce

10. Add boiling water and rock sugar

11. Pour all the ingredients into the casserole, return the pork to the pot and cook on medium-low heat until the eggplant is cooked and tender

12. Add green and red peppers, chopped green onion, chicken bouillon, and grind in black peppercorns

Tips:

The most important thing in the cooking process of eggplants is to stir-fry them in a frying pan until they are soft, and add the soy bean paste to your taste.
