Anyway, there is always one meal of noodles for three meals a day. It is quite delicious to cook some seasonal vegetables and make a hand-made noodles.

Eggplants and hot peppers are common vegetables in summer. It is easy to mix with some meat and the noodles are very fragrant and not greasy at all. The nutrition is in the bowl, and it is delicious.

Eggplant Diced Pork Hand Rolled Noodles

1. Ingredients map

2. First cut the meat into small cubes, first use cooking wine soy sauce, and marinate in starch

3. Cut the eggplant into strips, shred the peppers, and cut the tomatoes into small particles

4. Pickled hot peppers with vinegar, salt and sesame oil are very appetizing.

5. Marinate the diced meat and stir-fry in hot oil

6. Stir-fry the meat until its color changes

7. Add garlic and minced ginger

8. Add the cut shredded eggplant and stir fry evenly

9. Add tomatoes and stir well

10. Fry the eggplant until tender and pour some oyster sauce

Tips:

The eggplant will not turn black when it is soaked in water before frying
