Eggplant Roasted Beans

Wash the eggplant and beans.

Cut the eggplant into long strips, add a little salt and marinate for 10 minutes, then squeeze the water.

Wash garlic and scallion, cut into fines.

Put oil in the pan, add the beans and stir fry for 2 minutes.
