Eggplant Salted Fish Claypot

Prepare raw materials;

Cut the eggplant into pieces and put it in a fresh-keeping box, then put it in the microwave for three minutes; (this step is the reason why the eggplant absorbs less oil, which is very important)

Heat the pan with cool oil, add the salted fish and fry it;

Fry until golden brown, turn over and fry the other side until golden brown;

Add garlic and ginger to sauté;

Add the eggplant and stir fry a few times;

Then add a little soy sauce, stir fry for color, add a little water and simmer for two minutes;

Add a pinch of salt to taste;

Tips:
1. Cook the eggplant in a microwave oven for three minutes, so that the eggplant is pre-processed and has some moisture, so that the fried eggplant will not absorb oil;
2. Cut the salted fish into small pieces and fry on both sides until golden brown;
3. Add the eggplants and stew together, add some salt to taste, and finally add green peppers and stir-fry to change the color.
