Eggplant with Minced Meat

Remove the stems of fresh eggplants, cut them in half, and start steaming with boiling water. About 15 minutes. (Spread a little less oil on the steaming grid.)

Let the steamed eggplant cool for later use.

Tear the cold eggplant into strips by hand. Put it in a bowl, then turn it upside down and pick it up on the plate to shape.

Heat up the oil in the pan, add the bean paste and fry to get the red oil.

Add 2 sliced jelly strips, millet, green onions and ginger and stir fry until fragrant.

Put the minced meat, pour the cooking wine.

After frying out the oil, add light soy sauce, oyster sauce and chicken essence to taste.

Just drizzle the fried meat on the eggplant. Since the eggplant itself has no flavor at all, it must be stirred well before it can be eaten.
Tips:
If you like the smell of fish, add some vinegar and sugar to it.
