Eggplant with Mutton Sauce

Eggplant peeled and washed

Eggplant cut into triangles

Cut tomatoes and green peppers
4.
Put mutton oil in the pot to heat
5.
Add eggplant and deep-fry
6.
Deep-fry the eggplant in batches
7.
Put oil in the pot, add tomatoes and stir fry
8.
Add green pepper and stir fry until half cooked
9.
Add the fried eggplant, add salt, sugar and soy sauce and stir fry
10.
Add minced garlic, turn off the heat and stir-fry evenly, ready to be out of the pan
