Enjoi Energy Salad

Rinse the quinoa with clean water, put the quinoa in a pot, and add brine. Bring to a boil and cover, reduce to low and simmer for about 15 minutes, until chewy. Stop heating, cover and let stand for about 5 minutes.

Peel the carrots. Cut sweet potatoes, apples and carrots into easy-to-eat pieces.

Fry the sweet potatoes in a large pot with enjoi extra virgin olive oil at medium high temperature for 6-10 minutes, until the sweet potatoes are golden brown and chewy. Add the carrots and continue to stir fry for 3-5 minutes.

Add sweet potatoes, apples, carrots, spinach, raisins and cashews to a large bowl and mix well.

Mix mustard sauce, honey, balsamic vinegar, enjoi extra virgin olive oil, salt and pepper to make a sauce. Drizzle the sauce on the salad and stir gently. Enjoy both hot and cold!
