Famous German Traditional Christmas Bread【storen】

1. Soak the dried fruit first. It is best to do it 2-3 days in advance. Mix all the dried fruit, the rum will not completely overwhelm the dried fruit after adding it, you need to turn it over frequently to allow the dried fruit to fully absorb the rum

2. Soaking is complete, drain it for later use

3. Wash lemon and orange with salt, scrape the skin and set aside

4. Make starter. Mix milk, flour and dry yeast

5. Put the oven to ferment at 30 degrees for 40 minutes

6. Ferment to a bubble on the surface

7. Add other materials other than butter in the dough material and leaven into the bucket of the bread machine

8. 20 minutes selection process

9. Add butter and continue to knead until the butter is fully integrated

10. Add the roasted pecans and the drained fruit, stir to make the dried fruit evenly distributed

11. Take out the dough and round it into a container, continue to ferment, and ferment to 1.5 times its size. Because there is too much dried fruit in the dough, it will affect the expansion force of fermentation. It’s about 1.5 times bigger.

12. After fermentation is complete, take out the fermented dough, divide it into 3 doughs of about 360 grams, and round them.

13. Flatten the dough and roll out 1/3 of the dough flat

14. Turn it over and make an indentation in the middle of the other 2/3

15. Fold the flattened part and press the edge into the indentation

16. Finally, gently shape the dough into a crescent shape by hand, so that the shape of the baby Jesus is completed.

17. Complete three in turn. Continue to ferment in the oven to 1.5 times

18. Put it in the middle of the preheated oven, and bake the upper and lower tubes at 180 degrees for 30 minutes. Take out the baking tray and rotate it at 180℃ in the middle, and then continue to bake

19. Baked

20. Spread melted butter on the surface while it is hot, and then sprinkle with thick powdered sugar. Sealed after cooling

21. Finished product

22. Let it stand for a few days and then slice it for better taste

Tips:

There are too many ingredients to make these three breads, so the chef's machine can make noodles no problem. It is more difficult to make dough in the bread machine (I made the dough twice later). For those of you who use the bread machine, you can subtract one-third of the ingredients to make two Stollen breads

The baking time and temperature can be adjusted according to the size of the bread you make and the habits of your own oven.

Dried fruit can be what you like or what you have at home
