Raise the pot and add oil (not too much). When the oil temperature is 6 to 70% hot, put the meat skin down and put it in the pot. At this time, the oil in the pot will splash all around, it is better to use the pot lid to resist it, or it is safer to cover the pot lid directly.
7.
Fry until the surface of the skin is browned, then remove.
8.
Put the meat in the boiling water and soak for 7 or 8 minutes. The purpose of this is twofold. One is to remove greasy, and the other is that the skin of the meat will be wrinkled after being steamed.
9.
Remove the meat, let it cool (or freeze it in the freezer for 5 minutes), and cut into thin slices.
10.
Place the meat slices on the bottom of the bowl with the skin side down.
11.
A pack of Yibin Broken Rice Sprouts. It can be eaten directly or in hot oil. Add chopped green onion, minced ginger, soy sauce, sugar, salt, and monosodium glutamate.
12.
Spread the fried sprouts on the meat slices.
13.
Put it into the steamer, 1 hour after steaming on the ordinary steamer, and 30-50 minutes for the pressure cooker.
14.
After steaming, take a flat plate and turn the meat bowl upside down.
15.
After the juice comes out, put it into the pot, and hook a thin slice of starch with water.
16.
Pour on the meat, and then boil the small greens around the side of the plate.
17.
A plate is full of aroma, and the famous [Sprout Pork] is ready. Although the meat is large, it melts in the mouth and is fat but not greasy.
