1. Some people think that it is troublesome to deal with the squid world, but it only takes three steps. First, separate the squid's body, eyes and feet. As long as one hand holds the body, the other hand grasps the eyes and feet, and the two hands are pressed in opposite directions, they can be separated.

2. Tear off the skin of the squid's body; remove the hard shell (that is, the luminous body of the squid) inside the body.

3. Treat the eyes and feet. First remove the capsule shell carefully not to break it, and then cut off the eyes, mouth and the tips of the feet. Then the squid can be cleaned well.

4. Take a boiling pot and boil water. After the water boils, turn off the heat, and put the cleaned squid in to scald for 3 to 4 minutes.

5. While the squid is hot, mix all the seasonings with the minced garlic, chopped green onion and ginger and mix thoroughly.

6. After the hot squid is taken out, let cool and cut into a size suitable for your mouth, put it on the cabbage and drizzle with the freshly adjusted five-flavor sauce.

Tips:

The taste of black vinegar in Taiwan is actually different from the aged vinegar in the Mainland; if you use black vinegar, you can add up to 1 tablespoon.
