Spring is the season to eat bamboo shoots. I make fresh bamboo shoot dumplings once a year. They are really delicious.

Fresh Bamboo Shoot Dumplings

1. Fresh bamboo shoots just bought

2. Peeled

3. Cut into sections

4. Boil the water for about 3 minutes, remove the cold river, and then dice

5. Heat a wok with oil, add fresh diced bamboo shoots and stir-fry in water

6. Pork chopped into minced meat

7. Stir chopped green onion, minced meat, and diced bamboo shoots, add oil, salt, oyster sauce, ginger powder, and stir again

8. Wrap it like you usually make dumplings, and steam it for 15 minutes.

Tips:

Please don’t eat bamboo shoots if you have stomach problems
