Fried Beans with Shrimp Paste

Prepare the materials. Wash the beans and break them into one-inch-long pieces, chop the ginger and garlic, and cut the chili into circles.

Add the shrimp paste, salt and light soy sauce, stir fry and mix well.

Tips:
1. Pinch the beans when you choose them. The ones that are hard, elastic and firm are still tender. If they are bubbles and empty, they are older beans and they won't taste good.
2. If you are not afraid of trouble, the beans can be blanched in advance. After the water is boiled, add a little oil and salt, add the beans and cook until they change color and quickly pick them up, then rinse them in cold water to cool down, and then fry them directly without adding water to braise. The color of the beans that are blanched and fried will be slightly better than the color of the braised ones.
