"Fried eggplant box" is a traditional dish, which is a kind of food made by cutting the eggplant into thick slices, cutting it in the middle without cutting off, putting some meat filling, dipping it in the batter, and deep-frying it. Derived from this is the "fried lotus root box", both of which have the same method and are a home-cooked delicacy.

Fried Eggplant Box

1. Main and auxiliary ingredients: eggplant, minced meat, green onion and ginger,

2. Mix the stuffing first: add salt, monosodium glutamate, pepper, chopped green onion and ginger to the meat stuffing, fresh oysters

3. Stir it evenly

4. Mix flour and water to form a sticky batter

5. Wash the eggplant and cut into pieces with razor blades

6. Dip a layer of dry flour inside to make the meat sticky relatively firm

7. Put in the right amount of meat, and gently pinch tightly

8. Do it all in order

9. Take an eggplant box and dip it in the batter

10. Fry in hot oil

11. Fry over medium heat until both sides of the eggplant box are browned

12. Remove and put into the dish to drain oil. Ready to serve

Tips:

1. The seasoning of the meat filling can be matched according to your favorite.
2. When frying, use medium heat to prevent frying.
