Fried Eggplant (less Oil Version)
1.
Wash the eggplant with side dishes and set aside;

Add eggplant slices and soak in salt water for half an hour;
3.
When soaking the eggplant, make the sauce;
4.
Add oil to the hot pot and add minced pork belly with garlic. If you like spicy food, add some millet pepper;
5.
Add a little soy sauce;
6.
The soaked eggplant is squeezed out of water;
7.
Add eggplant and garnish in turn and stir-fry;
