Fried Eggplant with Bacon

Wash the eggplant and cut it into small pieces. Soak the cut eggplant in water to avoid oxidation and blackening.

Chop ginger and garlic, onion into small pieces, and green pepper into small pieces.

Heat up the wok, add the eggplant cubes without oil, stir-fry and serve.
