Prepare the ingredients, the broad bean petals are peeled in advance and set aside.

Wash the onions and cut into shreds. The spicy flavor in the onions can relieve some of the peculiar smell of pork loin.

The detailed method to deal with the smelly smell of pork loin: Step 1: Don't wash the fresh pork loin you bought back in a hurry. First tear off the transparent lard film that covers the surface of the pork loin. It will not be easy to tear off after contact with water; Its function is similar to body armor, it protects the pork loin from the invasion of bacteria, and it is also the source of the smell.

Step 2: Then clean the pork loin and put it on the chopping board. Use a knife to cut it along the length and divide it into two halves as shown in the figure. The dark red and white in the middle are both the pork smelt part and the source of the smelt smell.

The third step: Use a knife to start the knife along the dark red edge, and remove the whole piece of the waist. It must be removed; it can actually be a kind of gland, which is used to filter, and a considerable part of the toxins in the pig’s body will be affected. It is attached to it, so it needs to be removed; that is the weird smell of urine that we often call.

Next, I started to cut waist flowers. There are many patterns, but the cross knife is the simplest and quickest, and it is also the most used cutting method. Both: horizontal knife 45 degrees, vertical knife 90 degrees, the knife edge can be deeper but do not cut. After the change is finished, cut it to an appropriate size. Specific operation: Turn the pork loin over, start the knife from the long head, hold the knife horizontally against the surface and press the knife at 45 degrees. Note: Every time the knife goes down, the knife edge is easy to deep but do not cut.

Adjust the direction of the pork loin, stand the knife up to 90 degrees and cut it vertically. Similarly, the knife edge can be deeper and do not cut off. The surface is all with small openings.

After cutting horizontally and vertically, according to personal preference, cut into small strips; if a section is too long, cut it in half, and the length will be more even.

The fourth step: white vinegar, salt, add water and mix well, put the cut waist section into soak for a while, then remove and rinse.

Step 5: Boil some cooking wine in the pot, quickly scald the lower waist section, remove it and rinse it out, thoroughly remove the smell, and shorten the cooking time to achieve a crispy taste. When the waist section is heated and curled, the surface of the knives opens naturally, forming a waist flower shape; at this point, the pre-treatment of the waist is completed, and the peculiar smell of pork waist is minimized.

The following is the cooking process; the pan is heated and the oil is poured, the broad bean petals are sauteed first, then the onions are poured in, and some salt is added and the food is served until it is broken.

Pour the oil again, add the green onion, ginger, and garlic until fragrant, add the mushroom and tempeh sauce.

Stir-fry the flavor and red oil of the sauce on a low heat, then cook the cooking wine, soy sauce and a little sugar and stir well to neutralize the salty taste of the sauce and increase the freshness.

Pour in kidneys, onions and broad bean petals, turn to high heat and quickly stir and fry evenly.

Step 6: Finally, drip a little vinegar around the rim of the pot. As the vinegar evaporates and absorbs, it will further remove the fishy smell and increase the fragrance.

When the stir-fry is even, you can turn off the heat and get out of the pot.

Tips:
1. The pre-treatment of pork loin is the key. The specific method has been described in detail in the operation steps, so I won't talk about it here.
2. You can also replace onions with spicy foods such as peppers, garlic sprouts, leeks, etc., to relieve some of the peculiar smell in the pork loin.
3. There is no hot sauce with shiitake mushrooms and fermented black beans, you can also use your favorite sauces, such as Laoganma, Pixian Doubanjiang and so on.
4. Mushroom and tempeh hot sauce is a compound sauce, which is salty and spicy, so pay attention to the amount of salt, or it will not affect the taste.
