Fried Kidneys with Potatoes

Prepare the materials first. The pork loin should be handled by the meat seller in advance. If it is handled by yourself, the white fascia of the pork loin must be removed, otherwise the taste will be very heavy.

Wash the pork loin, process it again, and cut it into small grids, being careful not to cut it.

Put the sliced pork loin into clean water, add appropriate amount of rice wine, boil on high heat, and blanch for 1 minute. Take out and rinse again, set aside.

Cut the garlic into small particles, shred the ginger, and cut the dried chili into small pieces.

Peel the potatoes, wash and cut into slices.

Pour oil into the wok, which can be a little bit more than usual, heat up, add ginger, garlic and dried chili until fragrant.

Then add the pork loin, pour in an appropriate amount of rice wine, stir-fry for 1 minute, and serve.

Leave the bottom oil in the pan, add the potato chips and stir fry.

Add half a bowl of water and bring to a boil on high heat and turn to low heat.

When the potatoes are almost cooked, add the pork loin and stir-fry evenly.

Tune into a little soy sauce.

Turn to high heat to collect the juice, sprinkle in chopped green onions and stir-fry evenly, then turn off the heat.
Tips:
The unpleasant smell of pork loin mainly comes from the white fascia inside it, which must be cleaned up.
The cooking time of pork loin should not be too long, it will make the meat aging and affect the taste.
