The lotus root brought by my old mother during the Spring Festival has not been eaten. I found that some of it has started to go bad, but there are more. I can't finish it all at once, so I tried to make lotus root balls on a whim.

Fried Lotus Root Balls

1. Washed lotus root, grated

2. Add meat, the amount of meat, you can add according to personal preference, my family loves meat, I put more.

3. I added eggs and found that eggs are really a versatile ingredient, and they are all delicious

4. Mix all the ingredients and seasonings thoroughly. Then I will throw it into the oil pan and fry it until golden on both sides

5. When the oil is 70% to 80% hot, you can put the meatballs. (The goal is to eat for the first time, please ignore this sharp shape). When the meatballs have surfaced and are golden brown, they can be taken out and eaten.

Tips:

If you like spicy food, you can also add some chili powder. I have tried it for myself and it is also great.
During the mixing process, you can adjust the softness and hardness of the filling by adding eggs or flour. I personally think that the slightly softer filling is better when fried
