Fried Meatballs
1.
Wash pork and chop minced meat, mince ginger and chives and mix with minced meat. Change to a large container and add pepper powder, pepper, salt, chicken essence, cooking wine, cornstarch and mix well
2.
Prepare a spoon, take part of the meat, dip a little oil on the spoon, and use the radian of the spoon and the bowl to make a meatball
3.
Pour oil in the wok, add the meatballs to about 70% of the heat, and fry them slowly on medium-low heat until the meatballs are cooked and golden in color. Drain the oil and remove.
Tips:
1. The minced meat should be stirred in one direction to make the meat soft enough;
2. Only when the spoon is dipped in oil can make smooth and beautiful meatballs;
3. How to judge whether the meatballs are deep-fried: remove the oily meatballs to quickly remove the oil on the surface, which means they are fully cooked. If there is always damp oil on the surface, it means they are not cooked yet.
