Tips:
1. Pay attention to the beef to be cut horizontally. Add water in two times: add water for the first time, grab the beef, and then flush with water to squeeze out the water that has been eaten, so that the blood contained in the beef can be brought out, making the beef better Fresh; add water for the second time, while adding salt and other seasonings; add half an egg white at the end to keep the beef juicy;
2. The marinated beef is slippery with water, which is healthier. Put it in after the water is boiled, and remove it immediately after it changes color; the time to fry the beef is not easy to be too long, so make a bowl of juice and prepare it first;
3. Stir-fry the peanut sprouts first, add the freshly blanched beef slices when the flower buds are slightly soft, stir-fry twice and pour in the bowl of juice, let the vegetables evenly coat the bowl of juice, add the shallots, and stir fry Evenly
4. Peanut sprouts are harder to ripen than ordinary bean sprouts, so you need to stir-fry more; while beef stir-fry for too long is easy to grow old, so you must master different stir-fry times.
