Fried Potato Chips

Cut green peppers and carrots for later use.

Wash the potatoes, scrape the skins, and cut them into thin slices (not too thin, they tend to break when frying. The thickness is about the same as a 1 yuan coin) soak in water for about five minutes. Then put it in the pot and cook for two or three minutes (it's easier to cook when fried). Remove and drain the water.

Heat the pan with oil. Add potato chips, salt and stir fry.

Stir-fry until the potatoes are soft, shovel to the side of the pan, add oil again, add garlic, green pepper, carrot, and salt and stir fry together.

Finally, add light soy sauce and stir-fry evenly.
