Fried Rice with Diced Egg

Soak the fungus in cold water in advance

Remove the roots, wash and chop the fungus, chop the green onion, and cut the grilled sausage into thin slices

Pour the oil into the pan and heat it to low heat, pour in the sausage and stir fry until the edges are rolled up

Push the sausage to the side of the pan, scramble the eggs with the remaining oil, stir-fry directly in the pan while breaking

Pour in the fungus and chopped green onion and stir fry until the fungus makes a popping sound. Season with salt

Pour in the rice, use a spatula to beat the rice and stir evenly

Add a spoonful of soy sauce and mix well

Tips:
It is best to steam the leftover rice and let it cool. The fried rice must be in a non-stick pan to make the grains distinct. The frying process must be kept on low heat.
