Fried Rice with Sausage and Mixed Vegetables

Prepare raw materials;

Boil water in a boiling pot, add a little oil and salt, add pleurotus eryngii, carrots, green beans and corn kernels to cook; cook for one or two minutes, remove and drain;

Put the eggs in a bowl and add an appropriate amount of salt;

Beat the eggs, then add the rice;

Put the overnight rice in it and mix well;

Put a little water and an appropriate amount of oil in the pot, put the sausage slices in it and cook;

When the sausages are fried until transparent and the fat is fried, add the vegetables that have been blanched just now and stir fry;

Then add the rice mixed with egg mixture and stir fry;

After stirring evenly, add appropriate amount of salt and pepper and other seasonings to continue stirring;

After the rice is fried, turn off the heat, add the chopped green onions and continue to fry evenly;

Put it into a small bowl.
Tips:
1. Fried rice is best overnight rice, and the rice should be broken up in advance before frying, so that the rice grains are distinct;
2. You can choose the diced vegetables to match. It is recommended that vegetables with different colors and low water content be blanched and cooked in advance;
3. Because I want golden rice to be fried, I mix the rice with the egg liquid in advance, so that the surface of the rice is covered with a layer of coat; if you don't like it, you can scramble the eggs separately and mix them in;
4. The sausages were not steamed in advance, so I added some water and oil before frying the sausages. This way, the sausages can be cooked first and then fried to get the fat, which is a more trouble-free method.
