Fried Rice with Scallion and Red Intestine

Prepare a bowl of rice overnight.

Dice the red sausage and chives separately.
3.
Heat the pan with cold oil, pour the rice into the pan, and use a spatula to separate the rice as much as possible.

After the rice and oil are all fused, put the red sausage in and stir fry.

Add chives and continue to stir fry.

Add salt.

Then add the soy sauce, wait until the salt and soy sauce are fully stir-fried to taste, then it can be served.
Tips:
1. Try to fry the rice with overnight rice as far as possible. The grains will be distinct. If it is fresh rice, there will be moisture, and the fried rice will be sticky.
2. The red sausage and chives can be replaced with various ingredients that you like, but I think the red sausage is more tough and tastes better.
3. Because the rice needs a lot of oil, but if you don’t like the oil, you can put a little bit of oil, but try not to have too little or it will easily drill the bottom of the pot.
