My relatives gave me a lot of chayote, and I was tired of cooking it. I saw the leftover rice and I had a whim to come up with soy sauce fried rice. I had the staple food and vegetables, and then cooked some soup. A delicious lunch.

Fried Rice with Shrimp and Chayote Soy Sauce

1. Prepare the ingredients

2. Peel the chayote, diced eryngii mushrooms, marinate the shrimp with cooking wine, salt and light soy sauce

3. Boil the chayote and pleurotus eryngii in boiling water to remove and drain the water

4. Raise the frying pan and scramble the eggs out

5. Stir fried shrimp with some oil

6. After the shrimp changes color, add chayote, pleurotus eryngii, egg, add salt, stir fry and serve.

7. Put some oil in the pot, add the rice and stir

8. Add vegetable ingredients, add light soy sauce and dark soy sauce and stir fry evenly

9. Finally sprinkle with chopped green onion and serve

Tips:

The rice should be dried overnight, so it’s only fragrant.
