Fried Shrimp Rolls with Snow Peas

Remove the head and tail of the fresh snow peas you bought back, tear off the tendons on both sides, and wash them with clean water.

The shrimp rolls bought back from Chaoshan were sliced into thin slices.

Peel the carrots, wash and cut them into thin slices.

Boil water in a wok, blanch snow peas and carrot slices in a wok, add a little salt and a few drops of oil.

After boiling again, remove the snow peas and carrot slices, rinse with cold water and drain the water.

From the frying pan, add the shrimp roll slices and fry them until the edges are browned.

Then add the blanched snow peas and carrot slices, stir fry for a while, add some cooking wine.

Add some steamed fish soy sauce and stir well.

Sprinkle a little chopped green onion before boiling it out.

Take out the pan and serve.
Tips:
Because the shrimp rolls have a salty taste, some salt was added when the water was blanched, so I didn't add salt when this dish was fried, just added a little steamed fish soy sauce.
