Pleurotus eryngii and snow peas are both very nutritious vegetables. They are delicious and not expensive. Add a little green and red pepper to match them. It is easy to stir-fry, quick and delicious.

Fried Snow Peas with Pleurotus Eryngii

1. Prepare ingredients.

2. Pinch off both ends of snow peas and remove the old tendons.

3. After washing the snow peas, drain the water, cut the red pepper and pleurotus eryngii into pieces, and slice the garlic.

4. Add water to the pot, boil, add a little salt and oil, and blanch snow peas in the pot.

5. Put snow peas out and put in cold water.

6. Heat oil in a pan and add garlic slices until fragrant.

7. Add the eryngii mushrooms.

8. Stir-fry on low heat until soft.

9. Add snow peas and red pepper, and stir-fry the red pepper.

10. Add salt, sugar and soy sauce.

11. Stir-fry evenly to get out of the pot.

Tips:

When blanching snow peas, add a little salt and oil to maintain the emerald green color.
