Put about 700 grams of oil in the pan, and heat the oil to 90% hot. Put the fish in the pan and fry it until golden brown, then drain the oil from the pan.

Wash the pot and heat it with a certain amount of oil, add shredded ginger, garlic slices, pour a little water and stir fry, add a little cooking wine, add rice pepper, vinegar, dark soy, a little sugar, pepper, and chicken essence , A little salt (pay attention to the small amount of salt because the fish is marinated) and stir fry evenly.

Pour in the fish pieces and stir-fry evenly to taste, add a small amount of lard (tixiang), red pepper shreds, minced garlic and stir-fry until the sauce is placed on a plate.
Tips:
Do not cut the fish into too big pieces, as it will not taste good when marinated. For fried fish, it needs to be medium to high heat and the color is golden yellow, so you can drain the oil from the pan!
