Garlic Roasted Eggplant

Wash the eggplant, remove the stalks and cut open, put a flower knife, and soak in water for 15 minutes;

Chop pork and garlic into mince;

Spread a layer of salt on the surface of the eggplant, preheat the oven, and bake at 180 degrees for ten minutes;

Pour peanut oil in a hot pan;

Pour in the minced meat, sauté until the color changes, then add garlic and saute until fragrant;

Take out the soft-baked eggplants, put them on the fried fillings, put them in the oven, and bake at 200 degrees for seven minutes (forget to take pictures);

Take it out again, sprinkle with chili and chives, and bake for another three minutes.
