Gourd Meat

After washing the tenderloin, use kitchen paper to absorb excess water, and cut into small pieces with a side length of 1.5 cm.

Mix the tenderloin pieces and the cooking wine and light soy sauce in the auxiliary ingredients with a tablespoon of starch, and marinate for half an hour.

Cut the two-color bell peppers into diamond-shaped pieces, and cut the pineapple slices into small pieces. Set aside.

The garlic is flattened with a knife, peeled, and chopped into small pieces.

Take a bowl and the ingredients in the sauce, adjust the sauce, and set aside.

After the tenderloin is marinated, add a tablespoon of cornstarch, and evenly cover the surface of the meat with dry starch, and pinch it with your hands.

Pour an appropriate amount of camellia oil into the pot. The induction cooker uses uniform fire mode, with a firepower of 600 watts. When the oil temperature reaches 170 degrees, add the meat pieces and fry them until they are golden on the outside, remove them, put them back in the oil pan and fry them again, remove the oil, to achieve a crispy texture on the outside of the meat pieces.

Take another saucepan and use the induction cooker to cook with 1,000 firepower. When the pot is hot, pour in a proper amount of camellia oil, first add garlic diced and fry until fragrant, then add the sliced pepper and pineapple and stir fry.

Tips:
1. The tenderloin pieces are fried twice to make the cooked gourd meat tender on the outside and tender on the inside. If you are lazy and fried only once, the finished meat will not be crispy.
2. The consistency of the sauce needs to be well controlled. The consistency is not enough. The guluo meat looks unsightly in the soup and it also affects the taste; but it is too thick and it is not easy to evenly wrap the seasoning and sweat on the surface of the ingredients.
