Green Pepper and Potato Shreds

Clean the green peppers and shred them vertically.

Peel the potatoes, cut them into shreds, and soak them in cold water for about 30 minutes to remove the starch on the surface, and then drain the water for later use. This way, the fried potato shreds are crisp and refreshing. The length of the potato shreds should be the same as the green pepper. It looks good,

Put edible oil in the pot. After the oil is hot, first add the pepper and star anise to fragrant, then pour the green pepper shreds and stir fry.

Tips:
1. If you want to fry crisp and refreshing potato shreds, you must soak the potato shreds in water in advance to remove the starch on the surface. You can change the water halfway, so that the starch is removed more thoroughly.
2. The soy sauce should be added when frying the green peppers, so that the potato shreds will not be too colored, and the fried taste will be better.
