This is one of my favorite dishes in a private house. Pickled first, then deep-fried and then braised. It is very beautiful with shiitake mushrooms and celery. "

Grilled Fish Cubes with Shiitake Mushrooms

1. Cut fresh silver carp into pieces and soak in clean water. Wash repeatedly.

2. Marinate with appropriate salt, five-spice powder, and oyster sauce for half an hour.

3. We wash and slice the shiitake mushrooms.

4. The marinated fish fillets are coated with cornstarch and set aside.

5. Peel the garlic, chop the celery and shallots for later use.

6. Put rapeseed oil in the pot. Turn the heat to low when the oil is 70% hot, and add the fish cubes. Don't turn it over in a hurry, so that the fish pieces are evenly heated. Fry it a bit, and set aside.

7. After all the fish pieces are fried, turn on a high fire, and re-fry them once again, leaving oil at the bottom of the pan.

8. Add green onions. celery. Star anise bay leaves. Saute the garlic until fragrant.

9. Add Pixian bean paste and soybean paste. Put in clean water. Then put the fish pieces into a high heat and bring the water to a boil.

10. Add shiitake mushrooms, light soy sauce, dark soy sauce. Slowly simmer for half an hour.

11. According to personal preference, add celery.

12. Sprinkle. Turn off the green onion leaves and celery leaves.

13. The very delicious fish is ready.

Tips:

After the fish is boiled, it must be boiled on a low heat, as it will rot quickly.
