Grilled Sea Cucumber with Green Onions

1. Cut the sea cucumber into large pieces;

2. Cut the scallion into 5cm-long pieces, and shred the ginger;

3. Put cold sea cucumber water into a pot, boil on high heat, boil for 5 minutes, remove and drain the water for later use;

4. Add lard in a small pot, add scallion white when it is 50 to 60% hot, fry slowly until golden brown, turn off the heat;

5. Remove the scallion segments for later use, save the scallion oil;

6. In a separate pot, add shredded ginger, salt, cooking wine, soy sauce and sugar, and bring to a boil;

7. Add sea cucumber;

8. Add shallots;

9. Bring to a boil again, turn to low heat, and simmer for 2, 3 minutes;

10. Turn to high heat, add a small amount of water starch (about 1 tablespoon) several times to thicken, turn to medium heat and boil thoroughly to collect the juice;

11. Pour in shallot oil and turn off the heat.
