Hainan Chicken Rice

After the chicken is cleaned, wipe the excess water with kitchen paper.
Ingredients: half chicken, long-grain fragrant rice 300G, purified water 350ML, ginger 10G, 3 garlic cloves, sea salt 10G,
15G butter, 20ML mirin, 2G sea salt, 10G ginger, 1 cucumber, 1 coriander chili sauce:
4 red peppers, 2 cloves of garlic, 4 oranges, 25G yellow sugar, 3G sea salt, 5G ginger
Sauce:
40ML light soy sauce, 15G yellow sugar, 5G sesame oil

Mirin, sea salt 2G, ginger 10G are ground into ginger paste with a grinding board.

Squeeze the ground ginger paste out of ginger juice, mix well with ginger juice, mirin and sea salt.

Spread the mixed mirin ginger juice on both sides of the chicken. Massage the chicken slightly to help it taste. Let it sit and marinate for 20 minutes.

Weigh the long-grain basmati rice for later use.

Tips:
-The homemade chili sauce should be taken out with a clean, oil-free and water-free spoon; this can prevent the chili from spoiling, and it is recommended to eat it within 3 days after being sealed with plastic wrap and storing it in the refrigerator.
-Homemade chili sauce will be delicious with Hainanese chicken rice, and it can also be used as a dipping sauce for hot pot.
-Choose a chicken that is not too big. I use black-footed chicken; it's not too big, so it's just cooked through in 25 minutes.
-The oranges used in the chili sauce can be replaced with kumquat or lime juice.
-This kind of long red pepper will not taste very spicy. If you like to eat very spicy, you can add 1-2 millet peppers and smash it together.
