I like dragon fruit with red meat, but what I like more is its colorfulness.
After eating meat, I don’t want to waste it when I look at this skin.
So I scraped out the inside of the skin to make noodles, which looks really good.
As for the taste, when I eat it, the pitaya peel is completely gone.

Hand-rolled Noodles with Dragon Fruit Peel

1. Use a knife to scrape out the pitaya flesh

2. Put it in a cooking cup, add a small amount of water to make a paste

3. Add half a teaspoon of salt to the flour, mix well, slowly add the pitaya paste and mix well

4. Knead into a hard dough, cover with a damp cloth and wake up for two hours

5. Knead into a smooth dough

6. Take half of the dough, dip some flour and roll it into thin slices

7. Sprinkle more flour, fold both sides and cut into even strips with a knife

8. Shake it up again, the noodles are ready

9. Boil an appropriate amount of water in a pot, and cook the noodles after the water is boiled

10. Add garlic, peanut oil, salt to the bowl

11. After the noodles are cooked, put them in a prepared bowl, add vinegar, light soy sauce, and chopped green onion, mix well

Tips:

1. Try to knead it into a harder dough, so that it is easy to handle, otherwise it will be sticky.
