Ever since I was a child, I like to eat bamboo noodles made by my father. Our family calls it that because it is steamed in a steamer.

Henan Braised Noodle/cage Noodle/steamed Noodle

1. Put the noodles on the steamer and steam for 10 minutes

2. Prepare auxiliary materials, bean sprouts, beans, celery (the host did not put) onion, garlic, red pepper, star anise

3. When you buy meat, it’s best to buy pork belly slices, and stir-fry the meat until it is golden brown (actually, it’s just frying, not too dry).

4. Put the shallots, garlic, chili, star anise in and sauté (you can put more oil)

5. Put the beans and fry for 1 minute

6. Put the bean sprouts and meat celery in, add salt, chicken essence, dark soy sauce, (you can put more in the dark soy sauce for coloring)

7. Do not add too much water to 3/4 of Moguocai. Boil

8. The noodles here must be cold, turn off the heat and put the noodles in to infiltrate the moisture

9. Put it in a steamer and steam for another 15 minutes

Tips:

Because you need to add more noodles, oil, salt, and dark soy sauce after cooking, it is best to put the noodles in the first step of steaming with the vegetables. The steamed noodles are so cool that you can pick them with chopsticks.
