Braised noodles is a specialty of Henan. The most traditional is lamb stewed noodles. Many flavors are also derived now. Henan Braised Noodles

1. Put the flour, water, and salt in the main ingredients into a basin together to form a smooth dough, and cover with a wet cloth for 30 minutes

2. Then divide it into small doses, knead it into a slightly longer shape and then cover the cloth for 10 minutes, roll out the long pieces, press it with a rolling pin in the middle, apply oil to the surface of each piece, and place it on the plate. 3. Add lamb and lamb bones to the boiled meat and simmer for 2 to 3 hours

Tips:

The noodles of braised noodles are very important, and it is best to choose high-gluten noodles. I use our ordinary flour here, the dough should be harder, it will be very soft after 饧.
