Home-cooked Cold Dishes

1. Prepare the required ingredients, rinse them and dry them for later use;

11. Add appropriate amount of salt, sugar, chili oil, apple cider vinegar and mature vinegar in sequence;

Tips:

1. Homemade cold dishes, although there are various ways to match ingredients, cucumber, vermicelli, coriander and shredded pork are indispensable;
2. When washing vegetables, soak them in light salt water for 10 minutes, then rinse to control dryness;
3. I used dry vermicelli this time. In terms of taste, the newly made wet vermicelli is better, but considering that many friends can't buy the newly made vermicelli, it is recommended to buy some dry vermicelli on Taobao;
4. Fry the carrots in advance, they will taste better, and it is easy to absorb nutrients;
5. I make chili oil by myself. Take appropriate amount of chili powder, add a little salt, cooked sesame seeds, and chopped peanuts and mix well. Pour the hot cooking oil in the pot and mix it evenly. I like spicy food at home. Always prepare homemade chili oil;
6. Apple cider vinegar has a good flavor enhancement effect in cold dishes. It is not recommended to omit it, but it is also possible to replace it with orange juice;
7. About 4 grams of salt, 25 grams of vinegar, 20 grams of sugar, and 10 grams of apple cider vinegar are added to my mix. The sweet and sour taste is relatively heavy.
